		<description>Mei - You&#039;re surely right, except that I don&#039;t think respect for vegetables is limited to &lt;em&gt;fine&lt;/em&gt; Chinese chefs. There are chefs at modest but dependable Chinese restaurants as well as home cooks who do lovely greens, too.</description>
