The great Argentine chef Diego Jacquet has worked at Ferran Adria’s elBulli and Aquavit in New York. On May 21st he’ll add a one-night-only BurgerMonday session to his distinguished CV, approaching the burger as he would a steak at his London restaurant Casa Malevo.

He’ll form the up-sized patty by hand with the finest aged, grass-fed Argentine beef and, once charred and just ready to bleed juice, dress it with chimichurri sauce. The chimichurri cheeseburger will be positioned on the three-course menu between empanadas and Jacquet’s signature dulce de leche crème brûlée.

This pop-up will be divided into five overlapping sittings. Each sitting will last about 90 minutes.
