Goodman may cook its steakhouse-style burgers using a coveted, state-of-the-art Josper charcoal oven grill, but chef John Cadieux is pretty sure he can get even better results with smaller batches of burgers sizzled atop an old-tech flat-top griddle like the one at Andrew’s Gray’s Inn greasy spoon.
He’ll attempt to prove it for one night only at the 30 May BurgerMonday Pop-Up. To slant the odds in his favour he’s teaming up with butcher Darragh O’Shea to produce a custom blend of Black Angus beef cuts from Ireland and the USA for what we’re calling the Irish-American Goodman O’Shea bacon cheeseburger.

The pop-up will be divided into 4 overlapping seatings beginning at 7pm, 7:30pm, 8pm and 8:30pm. Each sitting will last 1-1/2 to 2 hours.
