Lionel Lévy, the Michelin-starred chef at Une Table, au Sud in Marseille, loves to revisit the classics. The protégé of Gérard Garrigues, Yves Camdeborde, Eric Fréchon and Alain Ducasse has made a name for himself with signature (re)inventions like his bouillabaisse milkshake.

For this BurgerMonday pop-up on the 23rd of May he’ll travel to London and Gray’s Inn greasy spoon Andrew’s to re-imagine the classic burger. He’ll not mess around with the chopped steak patty itself but will introduce new looks for some traditional toppings with his pop-up burger, the BLT Provençal.

As a starter, Lévy will serve his savoury homage to a sweet British classic, a salmon (tartare) crumble.

The pop-up will be divided into four overlapping sittings beginning at 7pm, 7:30pm, 8pm and 8:30pm.  Each sitting will last between between 1-1/2 and 1-3/4 hours.
