In London, thin, crisp, stiff, New Yorkish pizza is very hot, whereas soft, pliable pizza in the Neapolitan way is suddenly very not. Such is the fickleness of food fashion.

The rash backlash from the hypesters against classic Neapolitan – the OG pizza – can be summed up in a single-4-letter F word:

FLOP

But pizza is not a zero-sum game. You can embrace the newfound popularity of no-flop pizza pies and slices typically inspired by the ones I grew up with in New York and still maintain a soft spot for the OG pizza of Naples.

“The pizza flop is our heritage,” explains Alessandro Condorro of L’Antica Pizzeria da Michele, the temple of pizza in the holy city of pizza. “Some foreigners may want their pizza to be as flat and rigid as cardboard. Our pizza is bendy, not trendy.”

To reclaim the timeless flop, come join me at the Da Michele branch in London’s Soho on July 2nd for a celebration of old-school pizza that won’t stand up on its own. Every wondrously droopy slice depends on your loving support.
