Laissez Fare – Gwilym does not take all the credit for the quality of his espresso drinks, which are always incredibly good and often world class. He makes it clear he is only the last in a line that stretches from grower(s) to roaster to barista and determines end quality in the cup. “I just stop the button at the right time,” he says, with only a small dose of false modestly.

I’ve been trying to track him down for the last month or so since I read about his winning the barista competition in Wine Spectator (of all places?!). Since I don’ t love or work near the city, this means I have to find him on Sundays and I haven’t gotten around to it yet (tried once, but he wasn’t there). I will definitely try my luck again 🙂

What did you make of his espresso – was it better than anything else you’ve tried?
