I've been a barista for some time, and have focussed on espresso, but have recently also been getting more into the art of pourover brewing - when great coffees are brewed in this way their flavours are indeed both beautifully clear, and approachable, which is why hand-pour filter is beginning to emerge more alongside great espresso in London now. I look forward to hopefully checking out the Penny U when I visit the World Barista Championships this week! Good write up!
